Tomato Rice
Tomato Rice is a simple South Indian meal. This is an easy, quick and delicious recipe .It is a healthy tiffin for kids. This recipe is made with simple ingredients ,rice, tomatoes, spices and herbs.
INGREDIENTS
- 2cup cooked basmati rice
- 2 medium sized onions
- 6 chopped garlic cloves
- 2 green chillies
- 4 tomatoes
- 2 tbsp corriander leaves
- curry leaves
- 1/2 tsp mustard seeds
- 1 tbsp urad dal
- 1 tbsp chana dal
- 2 dried red chillies
- 1/4tsp turmeric powder
- 1/2 tsp kashmiri chilli powder
- 1 tsp red chilli powder
- 1/2 tsp fennel powder
- 1/4 tsp asafoetida powder
- 1 1/2tsp salt
- 3 tbsp sesame oil
- 1 1/2 tbsp ghee
- 1/4 cup hot water
How to make Tomato Rice
- Heat oil in a cooking pan, add 3 tbsp of sesame oil .To this add 1/2 tsp mustard seeds,1tbsp chanadal, 1tbsp uraddal and saute for few minutes.
2.Add 2 medium sliced onions, 2 green chillies, 2 dry chillies, 6 chopped garlic cloves, saute until the raw smell of garlic dissapear and onion starts turning brown.
3.Keep the flame low and add 1/4 tsp turmeric powder,1/2 tsp kashmiri chilli powder,1tsp red chilli powder and 1 1/2 tsp salt.
4.Saute the spices well and add tomatoes to the mixture.
5.Add 1/2tsp fennel powder, 1/4 tsp asafoetida powder, mix well and add 1/4 cup hot water.
6.When the tomato turns pulpy , add corriander and ghee to it and cook until the oil separates from the sides.
7.Add 2 cup boiled basmati rice to this.
8.Mix well and cover the pan with a lid and cook for 2-3 minutes on low flame.
Serve the Tomato Rice with curd salad, pickle and papad!
